Should I invest in a taxable account

I’ll be totally honest my risk tolerance is pretty low, I like to sleep comfortably at night knowing my money will (likely) grow forever (based off history). I plan to invest in a boring etf like VOO and grow it for decades. My question is I want to invest but I do not have taxable earned income as a college student so I cannot contribute to a ROTH IRA. Is it smart to open a taxable self-investing account and buy VOO and hold, or should I wait a year or 2 till I get a taxable income job and open
